Swedish-Style Potato Cakes with Västerbotten Cheese

Ingredients:
- 500 g potatoes
- 100 g Västerbotten cheese (grated)
- 1 small onion (finely chopped)
- 1 egg
- 2 tbsp all-purpose flour
- Salt and pepper to taste
- Oil for frying
Instructions:
1. Peel and coarsely grate the potatoes.
2. Squeeze out excess moisture from the grated potatoes.
3. In a bowl, mix the grated potatoes, Västerbotten cheese, onion, egg, and flour.
4. Season the mixture with salt and pepper.
5. Heat oil in a frying pan over medium heat.
6. Shape the potato mixture into small cakes and fry them in the pan until golden brown on both sides.
7. Transfer the fried cakes to a paper towel to drain excess oil.
8. Serve warm with your choice of sides.
