Traditional Curd Pie (Perinteinen rahkapiirakka)

A delightful Finnish dessert made with a creamy curd filling and a soft pastry base.
Preparation Time: 1 hour (plus 30 minutes resting)
Serving Size: 8 servings
Ingredients:
- 1 egg
- ½ dl milk
- For brushing: 1 egg
- Approximately 7 dl all-purpose flour
- 1 tsp ground cardamom
- 1 tsp vanilla sugar
- 1 tsp curd cheese
- ½ dl sugar
- 1 dl raisins
- ½ tsp salt
- ½ pack fresh yeast
- 100 g butter
- 1 tbsp lemon juice
Instructions:
1. Warm the milk until it is lukewarm.
2. Mix in the salt, sugar, cardamom, and gradually add the flour.
3. Add the fresh yeast and melted butter to the mixture.
4. Incorporate the egg and lemon juice, and mix well.
5. Knead the dough until it is smooth and elastic.
6. Let the dough rise under a cloth for about 30 minutes.
7. Roll out the dough to fit a pie dish and place it into the dish.
8. For the filling, mix the curd cheese, raisins, vanilla sugar, and additional sugar if needed.
9. Spread the filling over the dough in the pie dish.
10. Brush the top of the pie with the beaten egg.
11. Bake at 200°C (392°F) for about 30-40 minutes or until the top is golden brown.
12. Allow to cool before serving.
