A delicious Finnish mushroom pie made with a creamy filling and a buttery crust. Perfect for a cozy meal!

Serving Size: 8 servings

Ingredients:

- 200 g butter
- 200 g quark
- 4 dl all-purpose flour
- 1 tsp salt
- 1 tsp baking powder
- 2 dl salted mushrooms (e.g., store-bought)
- 1 dl pearl barley
- 1 large onion
- 4 boiled eggs
- 1 dl fresh dill
- Sour cream for serving
- Dijon mustard for serving

Instructions:

1. Prepare the quark dough: Whip the butter and quark together in a bowl. Add salt, baking powder, and flour. Mix until a smooth dough forms.
2. Press the dough evenly into a pie dish.
3. Cook the pearl barley according to package instructions and set aside to cool.
4. Finely chop the onion and sauté it lightly in a pan.
5. In a bowl, combine the salted mushrooms, boiled eggs (chopped), pearl barley, sautéed onion, and dill.
6. Spread the mushroom filling evenly over the dough base.
7. Bake the pie at 175 °C (350 °F) for about 30-40 minutes, until the top is beautifully golden brown.
8. Allow to cool slightly before serving. Enjoy with sour cream and Dijon mustard.
