Ingredients:
- 2 medium zucchinis
- 1 cup oats
- 1 cup shredded cheese (e.g., cheddar or mozzarella)
- 2 eggs
- 2 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp dried oregano
- Oil for frying
Instructions:
1. Grate the zucchinis using a coarse grater and squeeze out excess moisture.
2. In a bowl, mix the grated zucchini, oats, shredded cheese, eggs, minced garlic, salt, black pepper, and oregano.
3. Heat oil in a frying pan over medium heat.
4. Shape the mixture into small fritters and fry them in the pan for about 3-4 minutes on each side, until golden brown.
