Ingredients for Mushroom Soup:

- 300 g fresh mushrooms (e.g., button mushrooms or chanterelles)
- 1 onion
- 2 garlic cloves
- 4 dl vegetable broth
- 2 dl cream
- 2 tbsp butter
- Salt to taste
- Black pepper to taste
- Fresh parsley for garnish

Drink Suggestions:

- Dry or semi-dry sherry
- Madeira
- Chablis wine
- Pinot Blanc wine
- Muscadet wine
- Basic lager beer
- Fresh water

Instructions:

1. Peel and chop the onion and garlic. Slice the mushrooms.
2. Heat the butter in a pot, then add the onion and garlic. Sauté until they are soft.
3. Add the mushrooms and cook until they are golden brown.
4. Pour the vegetable broth into the pot and let the soup simmer for about 10 minutes.
5. Blend the soup with an immersion blender or in a regular blender until smooth, if desired.
6. Stir in the cream and season with salt and black pepper. Heat the soup again, but do not let it boil.
7. Serve the soup in bowls and garnish with fresh parsley.
