Ingredients:
- 300 g pasta (e.g., spaghetti)
- 150 g bacon or pancetta, diced
- 3 eggs
- 100 g Parmesan cheese, grated
- 2 garlic cloves, crushed
- Salt to taste
- Black pepper to taste
- Fresh parsley for garnish (optional)
Instructions:
1. Cook the pasta in salted water according to package instructions. Drain and reserve a little cooking water.
2. Heat a skillet over medium heat and add bacon or pancetta. Cook until crispy, about 5-7 minutes. Add crushed garlic and sauté for another minute.
3. In a bowl, whisk the eggs and mix in the grated Parmesan cheese. Add salt and black pepper to taste.
4. Combine the cooked pasta with the bacon in the skillet. Remove the skillet from heat and pour the egg mixture over the pasta. Stir quickly to cook the eggs with the warm pasta without scrambling them.
5. Add a little reserved cooking water if needed to achieve a creamy consistency. Garnish with fresh parsley before serving.
