Ingredients:
- 400 g pasta (e.g., spaghetti or fettuccine)
- 150 g bacon or pancetta
- 3 eggs
- 100 g grated Parmesan cheese
- 2 garlic cloves
- Salt
- Black pepper
- Fresh parsley (for garnish)
Instructions:
1. Boil the pasta in salted water according to package instructions until al dente.
2. Chop the bacon or pancetta and fry it in a pan until golden brown. Add the crushed garlic cloves and sauté for a moment.
3. In a bowl, crack the eggs and mix in the grated Parmesan cheese, salt, and black pepper.
4. Drain the pasta, reserving a bit of the cooking water. Add the pasta to the pan with the bacon.
5. Remove the pan from heat and pour the egg mixture over the pasta. Stir quickly to ensure the eggs do not cook too much.
6. If needed, add a little reserved cooking water to achieve a creamy sauce.
7. Serve immediately, garnished with fresh parsley and additional Parmesan cheese if desired.
