Ingredients:
- 300 g pasta (e.g., spaghetti or penne)
- 150 g pancetta or bacon
- 2 egg yolks
- 1 whole egg
- 100 g grated Parmesan cheese
- 2 cloves garlic, finely chopped
- Salt to taste
- Black pepper to taste
- Fresh parsley for garnish (optional)
Instructions:
1. Cook the pasta in salted water according to the package instructions until al dente. Reserve about 1 cup of pasta water and drain the pasta.
2. In a skillet, heat the pancetta or bacon over medium heat until crispy. Add the chopped garlic and sauté for another minute.
3. In a bowl, mix the egg yolks, whole egg, and grated Parmesan cheese. If needed, add a little reserved pasta water to make the mixture smooth.
4. Combine the drained pasta, pancetta, and garlic in the bowl. Toss quickly to coat the pasta with the sauce.
5. Add the egg mixture to the pasta and mix well. The sauce should be creamy, but avoid heating too much to prevent the eggs from scrambling.
6. Season with salt and black pepper to taste. Serve immediately, garnished with fresh parsley if desired.
