A refreshing and nutritious salad made with red lentil pasta, kale, cherry tomatoes, and a tangy vinaigrette. Preparation Time: 20 minutes
Serving Size: 4 servings
Ingredients:
- 5 dl red lentil pasta
- 1 - 2 kale leaves, chopped
- 250 g cherry tomatoes, halved
- 125 g small mozzarella balls
- 20 black olives, pitted
- A few slices of chorizo or salami
- Freshly ground black pepper
Vinaigrette:
- 1/2 tsp salt
- 1 tbsp sherry vinegar
- 2 tbsp organic rapeseed oil
- A pinch of sugar
Instructions:
1. Cook the red lentil pasta according to package instructions. Drain and rinse under cold water. Drain again and transfer to a serving bowl.
2. Add the chopped kale, halved cherry tomatoes, mozzarella balls, olives, and sliced chorizo or salami to the pasta.
3. Grind fresh black pepper over the salad.
4. In a small bowl, mix together the vinaigrette ingredients until the salt and sugar dissolve.
5. Drizzle the vinaigrette over the salad and toss well. Serve immediately.
