A delicious pasta dish that combines rich flavors and fresh ingredients, perfect for a weeknight dinner. Preparation time is about 30 minutes and serves 4.Ingredients:
- 300 g regular pasta (e.g., spaghetti or penne)
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 garlic cloves, crushed
- 1 red bell pepper, diced
- 1 zucchini, sliced
- 200 g cherry tomatoes, halved
- 150 g fresh spinach
- 100 g Parmesan cheese, grated
- Salt and black pepper to taste
- Fresh basil for garnish
Instructions:
1. Cook the pasta in salted water according to package instructions. Drain and reserve some cooking water.
2. Heat olive oil in a large skillet over medium heat. Add onion and garlic, sauté for about 3-4 minutes.
3. Add the bell pepper and zucchini to the skillet and continue cooking until the vegetables soften.
4. Stir in the cherry tomatoes and spinach. Mix and cook until the spinach wilts.
5. Combine the cooked pasta with the vegetables. Add a little reserved cooking water if needed to prevent drying out.
6. Season with salt and black pepper. Add the grated Parmesan cheese and mix well.
7. Serve immediately with fresh basil on top.
