A traditional Finnish breakfast inspired by Lapland, featuring soft eggs, fresh lingonberries, and a unique flatbread. Preparation Time: 15 minutes
Serving Size: 2 servings
Ingredients:
- 2 flatbreads (rieska)
- 4 eggs
- 200 g quark (maitorahka)
- 100 g lingonberries (fresh or frozen)
- 100 g smoked reindeer (optional)
- Salt and pepper to taste
- Butter for frying
Instructions:
1. Heat butter in a frying pan over medium heat.
2. Crack the eggs into the pan and fry them to your desired doneness. Season with salt and pepper.
3. Meanwhile, warm the flatbreads lightly in the pan or in the oven.
4. Serve the fried eggs on top of the flatbreads.
5. Add quark and lingonberries on top of the eggs.
6. If desired, also add sliced smoked reindeer.
7. Enjoy this delicious breakfast and get ready for the day!
