Leipäjuusto (Finnish Squeaky Cheese)

A delightful Finnish cheese, perfect for pairing with jam or berries. Preparation Time: 12-24 hours (plus cooling time)
Serving Size: 8 servings
Ingredients:
- Fresh milk (preferably unpasteurized cow's milk) or colostrum
- Rennet (20 ml)
- Salt
Instructions:
1. Pour the fresh milk (or colostrum) into a large bowl.
2. Add salt and rennet to the bowl.
3. Mix the ingredients thoroughly.
4. Allow the mixture to sit at room temperature for about 12-24 hours, or until it has set.
5. Cut the set mass into small pieces and gently heat over low heat until the cheese starts to pull away from the sides of the bowl.
6. Pour the cheese into a mold and press lightly to remove excess liquid.
7. Let the cheese cool, then store it in the refrigerator before serving.
