A refreshing pasta salad featuring smoked ham, apples, and pineapple, perfect for a light meal or side dish. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 2 dl pasta
- 150 g smoked ham
- 1 piece of leek
- 1-2 apples
- 1 can of pineapple
- 1 bag of peas, corn, and bell peppers mix
Dressing:
- 1 cup yogurt
- 1 tablespoon mayonnaise
- Salt and pepper to taste
Instructions:
1. Cook the pasta according to the package instructions, drain, and let cool.
2. Dice the smoked ham and chop the leek.
3. Peel and dice the apples.
4. Drain the pineapple and cut it into smaller pieces if needed.
5. In a bowl, combine the cooked pasta, ham, leek, apples, pineapple, and the peas, corn, and bell peppers mix.
6. In a separate bowl, prepare the dressing by mixing the yogurt, mayonnaise, salt, and pepper.
7. Pour the dressing over the salad and mix well.
8. Allow the salad to chill in the refrigerator for about 30 minutes before serving.
