Ingredients:
- 170 g bacon
- 1 onion
- 2 garlic cloves
- 200 ml heavy cream
- 200 ml grated Parmesan cheese
- 4 egg yolks
- Salt
- Black pepper
- Spaghetti
Instructions:
1. Cut the bacon into strips and cook in a skillet until crispy. Remove the bacon from the skillet and set aside.
2. Peel and chop the onion and garlic. Sauté them in the same skillet until soft and slightly golden.
3. Cook the spaghetti according to the package instructions. Drain and reserve a bit of the cooking water.
4. In a bowl, mix together the heavy cream, Parmesan cheese, and egg yolks. Season with salt and black pepper.
5. Combine the cooked spaghetti, bacon, and sautéed onions in the skillet. Pour the cream mixture over the pasta and stir quickly to avoid overcooking the egg yolks. If necessary, add a little reserved cooking water for a creamier texture.
6. Serve immediately and enjoy!
