A simple and delicious pasta dish made with pantry staples, perfect for a rainy day.
Preparation Time: 20 minutes
Serving Size: 2 servings
Ingredients:
- 200 g pasta (such as spaghetti or penne)
- 1 can of tomato sauce
- 1 onion
- 2 garlic cloves
- 100 ml frozen vegetables (such as peas and bell peppers)
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh basil or dried herbs (optional)
- Parmesan cheese (optional)
Instructions:
1. Cook the pasta according to the package instructions in salted water. Drain the pasta, reserving a little cooking water.
2. Peel and chop the onion and garlic.
3. Heat olive oil in a pan over medium heat and add the onion. Sauté until it's soft.
4. Add the garlic and cook for another minute.
5. Pour in the tomato sauce and add the frozen vegetables to the pan. Stir well and let simmer for about 5 minutes.
6. Mix the cooked pasta into the sauce. If needed, add a little reserved cooking water for the desired consistency.
7. Season with salt, pepper, and herbs. Stir well.
8. Serve warm, optionally sprinkling with Parmesan cheese.
