Ingredients:
- 2 carrots
- 1 red bell pepper
- 1 yellow bell pepper
- 1 zucchini
- 1 red onion
- 3 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried rosemary
Instructions:
1. Preheat the oven to 200°C (400°F).
2. Peel and chop the carrots, red onion, and zucchini. Slice the bell peppers into strips.
3. Place all the vegetables in a large bowl.
4. Add olive oil, salt, black pepper, thyme, and rosemary. Mix well to coat all the vegetables with the seasoning.
5. Spread the vegetables evenly on a baking sheet lined with parchment paper.
6. Roast in the oven for about 25-30 minutes, until the vegetables are tender and have a lovely golden-brown color. Stir once during roasting.
7. Serve warm.
