Ingredients:
- 300 g spaghetti
- 150 g bacon or guanciale
- 3 egg yolks
- 100 ml grated Parmesan cheese
- 2 garlic cloves
- Salt
- Black pepper
- Fresh parsley (optional)
Instructions:
1. Cook the spaghetti in salted water according to package instructions. Reserve 100 ml of the pasta water and drain the pasta.
2. Cut the bacon into small pieces and fry in a pan over medium heat until crispy. Add crushed garlic cloves and sauté for an additional minute.
3. In a bowl, mix the egg yolks and grated Parmesan cheese. Add a splash of reserved pasta water to loosen the mixture.
4. Combine the drained pasta with the bacon and garlic in the pan. Remove the pan from the heat.
5. Pour the egg mixture over the pasta and stir quickly to prevent the eggs from cooking too much. Add more reserved pasta water if needed.
6. Season with salt and black pepper. Serve with fresh parsley if desired.
