A delicious cheesecake-like cake with the freshness of lemon, perfect for Easter coffee gatherings.
Preparation Time: 1 hour
Serving Size: 10-12 slices

Ingredients

Crust:
- 100 g butter or margarine
- 1/2 dl sugar
- 1 egg
- 2 dl all-purpose flour
- 1 tsp baking powder
Filling:
- Zest of 1 lemon
- 3 tbsp lemon juice
- 1 dl raisins, chopped
- 3 eggs
- 1 dl sugar
- 2 cans (250 g each) quark
- 1 can (150 g) crème fraîche
- 3 tbsp cornstarch
- 2 tsp vanilla sugar
- 1/2 dl almond flakes

Instructions

1. In a mixing bowl, cream together the softened butter and sugar until light and fluffy.
2. Add the egg and mix well.
3. In a separate bowl, combine the flour and baking powder, then gradually add it to the mixture.
4. Line the bottom and sides of a springform pan with parchment paper.
5. Press the dough into the bottom and up the sides of the pan. Place the pan in the refrigerator while preparing the filling.
6. Grate the lemon zest and squeeze out the juice.
7. Finely chop the raisins using a sharp knife.
8. In a clean bowl, whisk the eggs and sugar until frothy.
9. Mix together the quark, lemon zest, lemon juice, chopped raisins, cornstarch, vanilla sugar, and finally fold in the egg-sugar mixture.
10. Pour the filling over the crust.
11. Bake in a preheated oven at 175°C (350°F) on the lower rack for about 45 minutes.
12. Allow to cool in the pan before removing.
Serve the cake chilled with coffee and fruits such as kiwis, grapes, or citrus fruits.
