Ingredients:
- 250 g fresh pasta - 200 g Mexican asparagus
- 2 cloves garlic, crushed
- 100 ml cream
- 50 g grated Parmesan cheese
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh basil or parsley for garnish
Instructions:
1. Cook the pasta in salted water according to package instructions. Drain and reserve a bit of the cooking water. 2. Clean and cut the asparagus into desired sizes.
3. Heat olive oil in a large frying pan over medium heat. Add the crushed garlic and sauté for about 1 minute.
4. Add the asparagus to the pan and sauté for about 5-7 minutes until tender but crisp.
5. Pour the cream into the pan and mix well. Allow the sauce to simmer for a few minutes.
6. Add the cooked pasta to the pan and stir. If needed, add a bit of the reserved cooking water to ensure the sauce coats the pasta well.
7. Stir in the Parmesan cheese and season with salt and pepper.
8. Serve immediately, garnished with fresh herbs.
