This refreshing and delicious salad is the perfect side dish for any meal. It's packed with color and flavor, and comes together quickly. Preparation Time: 15 minutes
Serving Size: 4 servings
Ingredients:
- 200 g fresh green leaves (such as romaine or iceberg lettuce) - 1 cucumber
- 1 bell pepper (preferably red or yellow)
- 100 g cherry tomatoes
- 1 avocado
- 50 g feta cheese (optional)
- 3 tbsp olive oil
- 2 tbsp balsamic vinegar
- Salt and pepper to taste
Instructions:
1. Rinse the green leaves and dry them. Tear the leaves into bite-sized pieces and place them in a large bowl. 2. Dice the cucumber, bell pepper, and avocado. Halve the cherry tomatoes.
3. Add all the chopped ingredients to the salad bowl on top of the green leaves.
4. Crumble the feta cheese over the salad, if using.
5. In a small bowl, mix together the olive oil, balsamic vinegar, salt, and pepper.
6. Pour the dressing over the salad and toss gently to combine all the ingredients well.
7. Serve immediately and enjoy!
