Ingredients:
- 300 g pasta (e.g., spaghetti or fusilli)
- 200 g fresh spinach
- 200 ml heavy cream
- 100 ml grated Parmesan cheese
- 2 garlic cloves, crushed
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh basil for garnish (optional)
Instructions:
1. Cook the pasta according to package instructions in salted water. Drain and reserve a bit of the pasta water.
2. Heat olive oil in a large skillet over medium heat. Add crushed garlic and sauté until golden brown.
3. Add fresh spinach to the skillet and cook until wilted, about 2-3 minutes.
4. Pour in the heavy cream and stir well. Let the sauce simmer on low heat for about 5 minutes.
5. Stir in the grated Parmesan cheese until melted. Season with salt and pepper.
6. Mix the cooked pasta into the sauce. Add reserved pasta water if the sauce is too thick.
7. Serve immediately, garnished with fresh basil if desired.
