Ingredients:
- 300 g pasta (e.g., fusilli or penne)
- 200 g fresh spinach
- 200 ml cream
- 100 g grated Parmesan cheese
- 2 garlic cloves
- 2 tbsp olive oil
- Salt, to taste
- Black pepper, to taste
- Fresh basil for garnish (optional)
Instructions:
1. Cook the pasta according to the package instructions in a large pot of salted boiling water. Drain and reserve some of the pasta water.
2. Peel and finely chop the garlic cloves.
3. In a large skillet, heat the olive oil over medium heat. Add the chopped garlic and sauté for about one minute until golden.
4. Add the fresh spinach to the skillet and cook until wilted.
5. Pour the cream into the spinach mixture and stir. Heat gently over low heat.
6. Add the grated Parmesan cheese and stir until melted into the sauce. Season with salt and black pepper.
7. Combine the cooked pasta with the sauce. If the sauce is too thick, add a little reserved pasta water until the desired consistency is reached.
8. Serve immediately, garnished with fresh basil if desired.
