Ingredients:
- 400 g pasta (e.g., spaghetti or fettuccine)
- 150 g bacon or pancetta
- 3 eggs
- 100 g Parmesan cheese (grated)
- 2 garlic cloves (minced)
- Salt to taste
- Black pepper (freshly ground)
- Fresh parsley (for garnish, optional)
Instructions:
1. Cook the pasta in salted water according to the package instructions. Drain the pasta, reserving about 1 cup of the cooking water.
2. In a pan over medium heat, cook the bacon or pancetta until crispy. Add the minced garlic and sauté for another minute.
3. In a bowl, whisk together the eggs and grated Parmesan cheese. Season the mixture with salt and black pepper.
4. Combine the cooked pasta with the bacon and garlic in the pan, mixing well.
5. Remove the pan from heat and quickly add the egg mixture to the pasta, stirring rapidly to ensure the eggs cook lightly and form a creamy sauce. If the sauce is too thick, add some reserved pasta water as needed.
6. Serve immediately, garnished with fresh parsley and additional Parmesan cheese if desired.
