Ingredients:
- 400 g fresh asparagus
- 2 slices of stale baguette
- 50 g parmesan cheese (grated)
- 2 garlic cloves (minced)
- 2 tbsp fresh herbs (e.g. parsley or basil)
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions:
1. Preheat the oven to 200°C (400°F).
2. Wash and trim the woody ends off the asparagus.
3. Blanch the asparagus in salted boiling water for about 3-4 minutes until slightly tender but still crisp. Drain and cool quickly in cold water.
4. In a bowl, mix together the breadcrumbs, grated parmesan cheese, minced garlic, and fresh herbs.
5. Place the asparagus in a baking dish and drizzle with olive oil. Season with salt and pepper.
6. Evenly sprinkle the breadcrumb mixture over the asparagus.
7. Roast in the oven for about 15-20 minutes, until the topping is golden brown and crispy.
8. Serve immediately and enjoy!
