Ingredients:
- 2 medium sweet potatoes - 1 can black beans (about 400 g)
- 1 red onion
- 1 bell pepper (e.g., red or yellow)
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 avocado
- Fresh cilantro (optional)
- Lime juice (optional)
Instructions:
1. Peel and cube the sweet potatoes. Place the sweet potato cubes on a baking sheet, drizzle with olive oil, smoked paprika, salt, and black pepper. Mix well. 2. Roast the sweet potatoes in a preheated oven at 200°C (about 400°F) for about 25-30 minutes, until they are tender and slightly golden.
3. Meanwhile, rinse and drain the black beans. Dice the red onion and bell pepper.
4. Once the sweet potatoes are ready, combine them in a bowl with the black beans, red onion, and bell pepper. Mix well.
5. Finish the salad with diced avocado and fresh cilantro if desired. Drizzle with lime juice before serving.
