A delicious and hearty nut curry that combines the rich flavor of nuts with refreshing cucumber, creating a balanced and light meal. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 200 g nuts (e.g., cashews or peanuts) - 1 medium onion, finely chopped
- 2 garlic cloves, crushed
- 1 tbsp curry powder
- 400 ml coconut milk
- 1 medium cucumber, diced
- 2 tbsp oil for frying
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
Instructions:
1. Heat oil in a large frying pan over medium heat. Add the chopped onion and sauté until soft and translucent. 2. Add the crushed garlic and curry powder. Cook for about one minute until the spices are fragrant.
3. Add the nuts to the pan and stir well. Sauté for about 2-3 minutes until the nuts are slightly toasted.
4. Pour the coconut milk into the pan and mix all the ingredients together. Allow the mixture to simmer on low heat for about 5-10 minutes until it thickens slightly.
5. Stir in the diced cucumber. Season with salt and pepper to taste.
6. Serve the curry warm, optionally garnished with fresh cilantro.
