A delightful cake featuring a zesty lemon flavor complemented by a unique salmiakki sauce, perfect for celebrating Easter.

Serving Size: 10-12 servings
Ingredients:
- 200 g butter
- 250 g sugar
- 4 eggs
- 300 g all-purpose flour
- 2 tsp baking powder
- Zest of 1 lemon
- 200 g quark
- 100 g lemon curd
- 200 g cream cheese
- 150 g powdered sugar
- 2 dl Haganolin mixer salmiakki (for sauce)
Instructions:
1. Preheat the oven to 175°C (350°F). Grease and flour a cake pan.
2. In a bowl, beat the softened butter and sugar together until light and fluffy. Add the eggs one at a time, mixing well after each addition.
3. In another bowl, combine the all-purpose flour and baking powder. Gradually add this dry mixture to the batter, alternating with the quark and lemon zest, mixing until smooth.
4. Pour the batter into the prepared cake pan and bake for about 30-35 minutes, or until a toothpick inserted into the center comes out clean. Allow to cool.
5. For the filling, mix the quark and lemon curd together. Once the cake has cooled, slice it into three layers and spread the quark mixture between each layer.
6. To make the frosting, beat together the cream cheese and powdered sugar until smooth. Spread the frosting over the top and sides of the cake.
7. Prepare the salmiakki sauce by heating the Haganolin mixer in a saucepan until it thickens slightly. Pour the sauce over the cake just before serving.
8. Optionally, decorate with Easter decorations and serve.
