A delicious and beautiful meringue cake that's easy to make, perfect for celebrations, and a delight for meringue lovers.

Ingredients

Base:
- 150 g butter
- 3 egg yolks
- 1 whole egg
- 1 1/2 dl sugar
- 1/4 dl milk
- 2 1/2 dl all-purpose flour
- 1 tsp vanilla sugar
- 1 1/2 tsp baking powder
Meringue:
- 3 egg whites
- 2 dl sugar
- Almond flakes
Filling:
- 2 1/2 dl heavy cream
- Powdered sugar, to taste
- 1 dl sea buckthorn curd
- Strawberries
- Pineapple cherries
Topping:
- A few strawberries and pineapple cherries

Instructions

1. Melt the butter.
2. Whip the egg yolks, whole egg, and sugar until creamy.
3. Add the milk and melted butter to the mixture.
4. In a separate bowl, mix the dry ingredients and gently fold them into the wet mixture.
5. Spread the batter onto a baking sheet lined with parchment paper.
6. Beat the egg whites for a moment, then gradually add the sugar, one tablespoon at a time, until fully incorporated.
7. Spread the meringue over the cake batter and sprinkle with almond flakes.
8. Bake at 175°C (347°F) in the middle of the oven for 15-20 minutes.
9. Allow the cake to cool completely.
10. Cut the cake base in half and place one half on a serving platter.
11. Whip the cream until fluffy and sweeten with powdered sugar.
12. Spread the whipped cream over the cake layer and drizzle sea buckthorn curd on top.
13. Add chopped strawberries and halved pineapple cherries on top of the cream.
14. Place the second cake layer on top of the filling and decorate the cake with additional strawberries and pineapple cherries.
