A delightful snack that is both nutritious and packed with flavor. Preparation time is only 30 minutes, and this recipe yields about 12 cookies.
Ingredients:
- 2 dl whole wheat flour
- 1 dl rolled oats
- 0.5 dl cane sugar
- 0.5 dl honey
- 0.5 dl butter (melted)
- 1 tsp baking powder
- 1 tsp vanilla sugar
- 0.5 dl nuts (chopped, e.g., walnuts or almonds)
- 0.5 dl dried fruit (e.g., apricots or raisins)
- A pinch of salt
Instructions:
1. Preheat the oven to 180°C (356°F).
2. In a bowl, mix the whole wheat flour, rolled oats, baking powder, vanilla sugar, and salt.
3. Add the melted butter, honey, and cane sugar to the mixture. Stir well.
4. Incorporate the chopped nuts and dried fruit into the dough, mixing until well combined.
5. Shape the dough into small balls and place them on a baking sheet lined with parchment paper, leaving space between them as the cookies will spread while baking.
6. Bake in the oven for about 10-12 minutes, or until the cookies are golden brown.
7. Allow to cool slightly on the baking sheet before transferring to a wire rack to cool completely.
