Ingredients:

- 2 dl milk
- 25 g fresh yeast
- 1 dl sugar
- 1/2 tsp salt
- 1 tsp ground cardamom
- 1/2 dl melted butter
- 1 egg
- 5-6 dl all-purpose flour
- 3-4 apples (diced)
- 1 tbsp fresh thyme (chopped)
- 1 tsp cinnamon
- 1 tbsp lemon juice

Vanilla Sauce:

- 2 dl cream
- 1/2 dl sugar

- 2 egg yolks

Instructions:

1. Warm the milk until it is lukewarm and dissolve the yeast in it.
2. Add sugar, salt, cardamom, melted butter, and egg. Mix well.
3. Gradually add flour until the dough is elastic and pulls away from the sides of the bowl. Knead the dough for about 5-10 minutes.
4. Cover the dough with a cloth and let it rise in a warm place for about 30 minutes.
5. Prepare the filling by mixing diced apples, thyme, cinnamon, and lemon juice in a bowl.
6. Once the dough has risen, roll it out into a sheet and cut out circles.
7. Place a spoonful of apple filling on each circle and seal the buns tightly.
8. Place the buns on a baking tray lined with parchment paper and let them rise for another 15 minutes.
9. Bake in a preheated oven at 200°C (392°F) for about 15-20 minutes or until the buns are golden brown.
10. To prepare the vanilla sauce: whip the cream, sugar, and vanilla sugar. Add the egg yolks and mix well.
11. Serve the apple-thyme buns warm with the vanilla sauce.
