Serving Size: 4 servings
Ingredients:
- 5 handfuls of penne pasta
- 1 tablespoon oil (or butter)
- 1 onion
- 1/2 teaspoon salt
- 1/4 teaspoon sugar
- 1 clove garlic
- 1/2 cup black olives
- 1/2 cup green olives
- 1/4 teaspoon black pepper
- 1/2 cup fresh basil (chopped)
Instructions:
1. Cook the penne pasta in salted water according to package instructions until al dente. Drain the pasta, reserving a little cooking water.
2. Heat the oil (or butter) in a large skillet over medium heat. Add the chopped onion and sauté until soft and translucent.
3. Add the minced garlic and stir for another minute.
4. Add the black and green olives to the skillet, mix well, and cook for a few minutes.
5. Add the cooked pasta to the skillet and combine all the ingredients. If the pasta seems dry, add a little reserved cooking water.
6. Season with salt, sugar, and black pepper. Finally, stir in the chopped basil.
7. Serve immediately while warm.
