A quick and delicious bowl dish combining barley, smoked tofu, and various toppings. Perfect for a healthy and filling meal!

Ingredients:
- 1.5 dl barley
- 200 g smoked tofu
- 1 tbsp olive oil
- 1 tsp soy sauce
- 1 avocado
- 1 dl cherry tomatoes
- 1 dl fresh spinach
- 2 tbsp sesame seeds
- 1 tbsp fresh cilantro (optional)
- Salt and pepper to taste
Instructions:
1. Cook the barley according to the package instructions until tender but still chewy.
2. Cut the smoked tofu into cubes and sauté in olive oil over medium heat for about 5-7 minutes until golden brown. Add the soy sauce to the pan and mix well.
3. Prepare the other ingredients by slicing the avocado and halving the cherry tomatoes.
4. Once the barley is ready, divide it into bowls. Top with the sautéed tofu, avocado, cherry tomatoes, and spinach.
5. Sprinkle sesame seeds and fresh cilantro on top. Season with salt and pepper to taste.
6. Serve immediately and enjoy!
