A quick and delicious pasta dish combining mushrooms and spinach for a rich and nutritious meal. Preparation time: 30 minutes. Serves: 4.Ingredients:
- 300 g pasta (e.g., spaghetti or penne)
- 200 g fresh mushrooms, sliced
- 150 g fresh spinach
- 2 garlic cloves, crushed
- 2 tbsp olive oil
- 50 g Parmesan cheese, grated
- Salt and pepper to taste
Instructions:
1. Cook the pasta according to package instructions in salted water. Drain, reserving a little pasta water.
2. Heat olive oil in a frying pan over medium heat. Add the crushed garlic and sauté for about a minute until fragrant.
3. Add the sliced mushrooms to the pan and cook until they are soft and golden brown, about 5-7 minutes.
4. Add the spinach to the pan and cook until just wilted. Season with salt and pepper.
5. Toss the cooked pasta with the mushroom mixture. If needed, add a little reserved pasta water to prevent the pasta from drying out.
6. Serve the pasta topped with grated Parmesan cheese.
