Ingredients:

- 2 dl jasmine rice
- 4 dl water
- 2 tbsp coconut oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 red bell pepper, diced
- 1 cucumber, sliced
- 1 dl fresh cilantro, chopped
- 2 tbsp soy sauce
- Juice of 1 lime
- Salt and pepper to taste

Instructions:

1. Rinse the jasmine rice under cold water until the water runs clear.
2. Cook the rice in 4 dl of water until tender and the liquid is absorbed (about 15-20 minutes).
3. Heat coconut oil in a pan and add the chopped onion. Sauté until the onion is translucent.
4. Add the minced garlic and diced bell pepper to the pan, and sauté for a few more minutes.
5. Mix the cooked rice into the pan with the vegetables. Add fresh cilantro, soy sauce, and lime juice. Stir well.
6. Season with salt and pepper to taste.
7. Serve warm with sliced cucumber on the side.
