This refreshing desert salad evokes the exotic flavors and colors of Dubai. Perfect as a light lunch or a side dish. Preparation Time: 20 minutes

Ingredients:
- 200 g couscous - 2 dl water
- 1 dl cherry tomatoes
- 1 cucumber
- 1 red bell pepper
- 1/2 red onion
- 100 g feta cheese
- 1/4 dl fresh mint
- 1/4 dl fresh parsley
- 1/4 dl olive oil
- 2 tbsp lemon juice
- Salt and pepper to taste
Instructions:
1. Cook the couscous according to package instructions. Typically, combine couscous with water and let it steam under a lid for about 5 minutes. 2. Chop the cherry tomatoes, cucumber, bell pepper, and red onion into small pieces.
3. Crumble the feta cheese and finely chop the mint and parsley.
4. In a large bowl, mix together the couscous, vegetables, feta cheese, mint, and parsley.
5. Prepare the dressing by whisking together olive oil, lemon juice, salt, and pepper. Pour the dressing over the salad and mix well.
6. Let the salad chill in the refrigerator for about 10 minutes before serving.
