Quick Vegetable Soup

Serving Size: 4 servings
Ingredients:
- 1 liter of water
- 3 potatoes
- 200 g mixed soup vegetables
- 200 g stir-fry vegetables
- 1 leek
- 1 beef stock cube
- Salt to taste
Instructions:
1. Peel and dice the potatoes into cubes.
2. Slice the leek into thin rings.
3. Bring the water to a boil in a large pot.
4. Add the potatoes and mixed soup vegetables to the boiling water.
5. Let the soup simmer for about 10 minutes until the potatoes are almost tender.
6. Add the sliced leek and stir-fry vegetables to the pot.
7. Crumble the beef stock cube into the soup and mix well.
8. Season with salt to taste and allow the soup to simmer for another 5-10 minutes until all the vegetables are soft.
9. Serve hot.
