A delicious asparagus tart, perfect as an appetizer or a light dinner. Enjoy fresh asparagus in spring and early summer when it's at its best. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 200 g fresh asparagus - 1 package gluten-free pie crust
- 2 dl cream
- 3 eggs
- 100 g grated cheese (e.g., cheddar or mozzarella)
- Salt and pepper to taste
- Fresh herbs (e.g., parsley or basil) for garnish
Instructions:
1. Preheat the oven to 200°C (392°F). 2. Wash and blanch the asparagus in boiling water for about 3-4 minutes until slightly tender. Drain and cut the asparagus into approximately 5 cm pieces.
3. Roll out the gluten-free pie crust into a thin sheet and line a pie dish with it.
4. In a bowl, mix the cream, eggs, salt, and pepper. Add the grated cheese and stir well.
5. Place the cooked asparagus on the pie crust and pour the cream and egg mixture on top.
6. Bake in the oven for about 20-25 minutes until the top is beautifully golden brown and the filling is set.
7. Let it cool for a moment before serving. Garnish with fresh herbs.
