Ingredients:
- 200 g pasta (e.g., spaghetti)
- 100 g bacon or pancetta
- 2 eggs
- 50 g Parmesan cheese (grated)
- 1 garlic clove (minced)
- Salt to taste
- Black pepper to taste
- Fresh parsley (for garnish)
Instructions:
1. Cook the pasta in salted boiling water according to package instructions until al dente.
2. Meanwhile, heat a pan over medium heat and cook the bacon or pancetta until crispy.
3. Add the minced garlic to the pan and sauté for an additional minute.
4. In a bowl, crack the eggs and add the grated Parmesan cheese. Mix well.
5. Once the pasta is cooked, drain it, reserving a bit of the cooking water.
6. Add the pasta to the pan with the bacon and garlic mixture. Stir well to combine.
7. Remove the pan from heat and quickly add the egg mixture to the pasta, stirring rapidly to cook the eggs lightly without turning them into scrambled eggs.
8. If the pasta seems too dry, add a little reserved cooking water.
9. Season with salt and black pepper to taste.
10. Serve immediately, garnished with fresh parsley.
