Ingredients:
- 200 g pasta (spaghetti or fettuccine)
- 100 g bacon or guanciale
- 2 egg yolks
- 100 ml heavy cream
- 50 g grated Parmesan cheese
- Salt
- Black pepper
- Fresh parsley for garnish (optional)
Instructions:
1. Cook the pasta in salted water according to the package instructions until al dente.
2. While the pasta is cooking, cut the bacon into small pieces and fry them in a pan over medium heat until crispy.
3. In a bowl, whisk together the egg yolks, heavy cream, and Parmesan cheese. Season with salt and black pepper.
4. Once the pasta is cooked, drain it and reserve a bit of the cooking water.
5. Combine the hot pasta with the bacon in the pan and mix well.
6. Quickly add the egg mixture to the pasta and stir to coat, ensuring the sauce does not scramble. Add a little reserved pasta water if needed for a silky sauce.
7. Serve immediately, garnished with fresh parsley if desired.
