Ingredients:
- 250 g pasta (e.g., penne or spaghetti)
- 2 tbsp olive oil
- 1 clove garlic, finely chopped
- 1 red bell pepper, diced
- 1 zucchini, sliced
- 200 g cherry tomatoes, halved
- 100 g fresh spinach
- 1 tsp salt
- 1/2 tsp black pepper
- 50 g grated Parmesan cheese (optional)
- Fresh herb mix (basil or parsley) for garnish
Instructions:
1. Cook the pasta according to package instructions in salted water. Drain and reserve a little cooking water.
2. Heat olive oil in a large skillet over medium heat. Add the chopped garlic and sauté for about a minute.
3. Add the diced bell pepper and sliced zucchini. Cook for about 3-4 minutes until the vegetables soften.
4. Add the cherry tomatoes and fresh spinach to the skillet. Cook for another 2-3 minutes until the spinach wilts.
5. Stir in the cooked pasta with the vegetables. If needed, add a bit of reserved cooking water to make the mixture creamy.
6. Season with salt and black pepper. Serve with grated Parmesan cheese and fresh herbs on top.
