A delightful Finnish semla cake, perfect for enjoying during the skiing holiday season with generous fillings. Preparation Time: 1 hour + rising time
Serving Size: 8-10 servings
Ingredients:
- 500 g all-purpose flour - 2 dl milk
- 25 g fresh yeast
- 100 g sugar
- 1 tsp salt
- 1 tsp cardamom
- 100 g butter
- 2 eggs
- 200 g almond paste
- 2 dl heavy cream
- Powdered sugar for decoration
Instructions:
1. Warm the milk until it is lukewarm and dissolve the yeast in it. 2. Add sugar, salt, cardamom, and part of the flour. Mix well.
3. Add melted butter and eggs, and knead the dough. Gradually add the remaining flour until the dough is smooth and elastic.
4. Let the dough rise under a cloth for about 1 hour, until it has doubled in size.
5. Roll out the dough into a flat sheet and shape it into a round cake.
6. Bake the cake in a preheated oven at 175°C (350°F) for about 20-25 minutes, until golden brown. Let it cool.
7. Slice the cake in half and fill it with almond paste and whipped cream. Reassemble the cake.
8. Dust with powdered sugar before serving.
