A delightful Finnish dessert made with sweet cardamom bread, filled with strawberry jam and whipped cream. Preparation Time: 2 hours
Serving Size: 8-10 servings
Ingredients:
- 2 dl milk
- 25 g fresh yeast
- 1 dl sugar
- 1 tsp cardamom
- 1/2 tsp salt
- 7-8 dl all-purpose flour
- 100 g melted butter
- Almond slices (for topping)
- Sugar (for topping)
- 3 dl cream (for whipping)
- Strawberry jam (for filling)
Instructions:
1. Warm the milk until it is lukewarm and dissolve the yeast in it.
2. Add sugar, cardamom, and salt. Mix well.
3. Gradually add flour until the dough is elastic.
4. Knead the dough with the melted butter and let it rise under a cloth until doubled in size.
5. Prepare a baking dish: cut a piece of parchment paper to fit the bottom and grease the sides.
6. Punch down the risen dough and shape it into a ball. Place the ball in the bottom of the baking dish.
7. Let it rise in a 50 °C oven for 30 minutes. Brush the top with egg wash and sprinkle with almond slices and sugar.
8. Increase the oven temperature to 200 °C and bake for 30 minutes.
9. Use a knife to carefully remove the bread from the dish and let it cool.
10. Whip the cream until fluffy and set aside the strawberry jam.
11. Cut the cooled bread into layers. Spread strawberry jam and whipped cream on each layer, repeating until all layers are filled.
12. Place the final layer on top and serve.
