A classic Italian dish that is quick and delicious, ready in under half an hour. Perfect for busy weeknights or a weekend treat.

Ingredients:

- 300 g spaghetti pasta
- 150 g bacon or pancetta, diced
- 2 eggs
- 100 g Parmesan cheese, grated
- 2 cloves garlic, minced
- Salt to taste
- Black pepper to taste
- Fresh parsley for garnish (optional)

Instructions:

1. Cook the spaghetti in salted boiling water according to package instructions until al dente. Drain and reserve a little cooking water.
2. In a skillet, cook the bacon or pancetta until crispy. Add the minced garlic and sauté for another minute.
3. In a bowl, crack the eggs and mix in the grated Parmesan cheese. Stir well and season with salt and black pepper.
4. Add the cooked pasta to the skillet with the bacon and garlic. Toss well to coat the pasta with the flavors.
5. Remove the skillet from the heat and pour the egg mixture over the pasta. Stir quickly to allow the eggs to partially cook in the residual heat, but avoid scrambling. If the mixture is too thick, add a bit of reserved cooking water.
6. Serve immediately, garnished with fresh parsley and additional Parmesan cheese if desired.
