Ingredients:
- 400 g cured beef
- 200 g fresh chanterelles
- 50 g Parmesan cheese
- 2 tbsp olive oil
- 1 lemon
- 4 salmon fillets
- 250 g mixed vegetables (e.g., broccoli, carrots)
- 100 g malt ice cream
- 100 g dark chocolate
- 100 ml port wine
- 1 spritz of Citra beer
- 1 spritz of Virmalised IPA
Instructions:
1. Prepare the Parmesan sauce by mixing grated Parmesan cheese with olive oil and lemon juice. Season with salt and pepper.
2. Cook the cured beef in a skillet over medium heat until beautifully browned. Let it rest before slicing.
3. Sauté the fresh chanterelles in olive oil until they are golden brown.
4. Quickly grill the salmon fillets until cooked but still moist.
5. Lightly steam the mixed vegetables to retain their crunch.
6. For dessert, melt the dark chocolate and serve it with malt ice cream, drizzled with port wine.
7. Serve the cured beef, chanterelles, salmon, and vegetables alongside your choice of beers.
