Serving Size: 4 servings
Ingredients:
- 300 g pasta (e.g., penne or fusilli)
- 200 g fresh salmon
- 2 dl heavy cream
- 1 dl fish stock
- 1 onion
- 2 cloves garlic
- Juice of 1 lemon
- 1 tbsp olive oil
- Salt and pepper to taste
- Fresh dill for garnish
Instructions:
1. Cook the pasta according to the package instructions in salted water. Drain and reserve a bit of the cooking water.
2. Peel and finely chop the onion and garlic.
3. Heat the olive oil in a pan over medium heat. Add the onion and garlic, sauté until soft.
4. Add the salmon pieces to the pan and cook for a few minutes until the salmon is cooked through.
5. Pour in the cream and fish stock, mix well, and let it simmer on low heat for about 5 minutes.
6. Add the cooked pasta to the pan and stir. If the mixture is too thick, you can add a little reserved cooking water.
7. Season with lemon juice, salt, and pepper. Mix thoroughly.
8. Serve the portions garnished with fresh dill.
