A delicious and quick stir-fry chicken with vegetables and rice, perfect for a busy evening.
Preparation Time: 30 minutes
Serving Size: 4
Ingredients:
- 400 g chicken fillets
- 1 dl soy sauce
- 2 tablespoons honey
- 2 cloves garlic
- 1 tablespoon oil
- 1 teaspoon pepper
- 200 g vegetables (e.g. broccoli and bell pepper)
- 250 g rice
- 5 dl water
- Salt to taste
Instructions:
1. Cook the rice according to package instructions in water, adding salt to taste.
2. Cut the chicken fillets into strips and crush the garlic cloves.
3. In a bowl, mix the soy sauce, honey, garlic, and pepper.
4. Add the chicken strips to the marinade and let it marinate for about 15 minutes.
5. Heat the oil in a frying pan and add the marinated chicken pieces. Cook until the chicken is done.
6. Finally, add the vegetables to the pan and stir-fry for a moment until they are cooked but still crisp.
7. Serve the stir-fried chicken and vegetables on top of the rice. Enjoy!
