Ingredients:

- 400 g pasta (e.g., spaghetti or fettuccine)
- 150 g bacon or guanciale, diced
- 3 egg yolks
- 100 ml Parmesan cheese, grated
- 2 garlic cloves, minced
- Black pepper, to taste
- Salt, to taste
- Fresh parsley, for garnish (optional)

Instructions:

1. Cook the pasta in salted water according to package instructions until al dente.
2. Heat a skillet over medium heat and add the diced bacon. Cook until crispy.
3. Add the minced garlic to the bacon and sauté for about one minute.
4. In a bowl, combine the egg yolks and grated Parmesan cheese. Add black pepper to taste.
5. Once the pasta is cooked, drain it but reserve a little cooking water.
6. Add the hot pasta to the skillet with the bacon and garlic. Toss well to combine.
7. Remove the skillet from heat and quickly stir in the egg mixture with the pasta, ensuring the yolks do not scramble.
8. If the mixture is too thick, add a bit of reserved cooking water to reach the desired consistency.
9. Serve immediately, topped with additional grated Parmesan cheese and fresh parsley if desired.
