A delicious and aromatic soup featuring birch polypore mushrooms, perfect for autumn. Preparation time is about 30 minutes. Serves 4.Ingredients:
- 300 g birch polypore mushrooms - 1 medium onion
- 2 garlic cloves
- 4 dl vegetable broth
- 2 dl cream
- 2 tbsp butter
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
1. Clean and chop the birch polypore mushrooms. Peel and finely chop the onion and garlic.2. Heat the butter in a pot and add the onions. Sauté until they are soft.
3. Add the chopped birch polypore mushrooms and continue cooking for about 5 minutes until the mushrooms are tender.
4. Pour in the vegetable broth and bring to a boil for about 10 minutes.
5. Stir in the cream and mix well. Let the soup simmer for another 5 minutes.
6. Season with salt and pepper. Blend the soup to a smooth consistency if desired.
7. Serve warm and garnish with fresh parsley.
