Ingredients:
- 300 g pasta (e.g. spaghetti) - 2 tbsp olive oil
- 3 garlic cloves, crushed
- 1 red bell pepper, diced
- 200 g fresh mushrooms, sliced
- 200 g cherry tomatoes, halved
- 100 g spinach
- 100 ml cream
- 50 g Parmesan cheese, grated
- Salt and pepper to taste
- Fresh basil for garnish
Instructions:
1. Cook the pasta in salted water according to the package instructions. Drain and reserve a little cooking water. 2. Heat olive oil in a large skillet over medium heat. Add crushed garlic and sauté until golden brown.
3. Add diced red bell pepper and sliced mushrooms. Cook for about 5 minutes until they are soft.
4. Stir in halved cherry tomatoes and spinach, cooking for a few more minutes until the spinach has wilted.
5. Mix the cooked pasta into the vegetable mixture. Add cream and grated Parmesan, stirring well. Add reserved cooking water as needed for a pleasant consistency.
6. Season with salt and pepper. Garnish with fresh basil before serving.
