Ingredients:
- 200 g pasta (e.g., spaghetti)
- 100 g bacon or pancetta
- 2 eggs
- 50 g Parmesan cheese (grated)
- 1 garlic clove (minced)
- Salt to taste
- Black pepper to taste
- Fresh parsley (for garnish)
Instructions:
1. Cook the pasta in salted water according to package instructions until al dente.
2. While the pasta is cooking, fry the bacon or pancetta in a pan over medium heat until crispy. Add the minced garlic and sauté for another minute.
3. In a bowl, whisk together the eggs, grated Parmesan cheese, salt, and black pepper.
4. Drain the pasta, reserving a little cooking water. Add the pasta to the pan with the bacon and garlic.
5. Remove the pan from heat and pour the egg mixture over the pasta, stirring quickly to cook the eggs without scrambling them.
6. If needed, add a little reserved cooking water to achieve a creamy consistency.
7. Serve immediately, garnished with fresh parsley.
